Zucchini Bread.
In the making of this bread… I think I have learned how to spell zucchini. No really. I had to “google” it at first. I guess I am a horrible speller.
I have seen a lot of recipes for zucchini pop up around the web. I have wanted to make some bread for the last few months, but since I didn’t have an oven in the RV… it had to wait until I got home and settled. My zucchini came from the grocery store… but if you are lucky enough to get some from the garden even better!
I know that there are a lot of recipes for zucchini bread… but this is the one I have used for quite sometime. It is a moist bread, jam-packed with fruits and veggies.
Here is my recipe for zucchini bread.
Zucchini Bread

- 3 eggs
- 1/2 cup vegetable oil
- 1/4 cup applesauce
- 2 cups sugar
- 2 cup unpeeled zucchini, grated
- 2 1/2 tsp. vanilla
- 3 cups flour
- 2 tsp. baking soda
- 1/2 tsp. baking powder
- 1 1/2 tsp. cinnamon
- 3/4 tsp. nutmeg
- 1 tsp. salt
- 1 small can of crushed pineapple, drained
Directions:
Beat eggs until fluffy in a large mixing bowl. Add oil, applesauce, sugar, vanilla, and zucchini. Mix well.
Sift dry ingredients together and then add to egg mixture.
Add pineapple.
Bake in greased loaf pans at 325 degrees for 1 hours.
* I used the mini loaf pans and only baked them for about 40 minutes or until they were done. Adjust your baking time according to your pan sizes.
Let cool. Remove from loaf pan and place on wire rack.
Eat Fresh.
When I make several mini loaves it is fun to give them away to friends and neighbors. With that in mind… I created a free printable for you all. Just attach to some mini zucchini bread and deliver. They will love it.

I had my daughter grate the zucchini for me. She loved it.
That is my recipe for zucchini bread. It is by my favorite zucchini bread recipe. I remember making this for the first time. It made my kitchen smell so good. I remember thinking wow… that is a lot of zucchini. I love it because it has a taste… but you can’t really taste it. Of course… I had to have my favorite peeps taste test this one for me.
