French Toast Muffins.

My husband’s favorite breakfast is…

French Toast.

Hands down.

What is your husband’s favorite breakfast??

We love having french toast for breakfast in our home. I decided I needed to make some French Toast Muffins.

Now… these muffins are not fried on a griddle but are baked in the oven. They are topped with a cinnamon and sugar topping.

French Toast Muffins

* adapted from the original recipe French Breakfast Puffs by Better Homes and Gardens Annual Recipes 1997

  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 1/2 tsp. baking powder
  • 1/4 tsp. ground nutmeg
  • 1/8 tsp. salt
  • 1 egg
  • 1/2 cup milk
  • 1/3 cup butter, melted

French Toast Topping

  • 1/4 cup sugar
  • 1/2 tsp. ground cinnamon
  • 1/4 cup butter, melted

Directions:

1. Preheat oven to 350 degrees. Line muffin tin with paper cups.

2. In a large bowl, combine flour, sugar, baking powder, nutmeg, and salt. Mix to combine.

3. In a separate bowl, beat egg slightly. Add milk and melted butter.

4. Add egg mixture to flour mixture.

5. Stir until just moistened.

6. Fill prepared muffin cups with batter.

7. Bake at 350 degrees for 20-25 minutes or until golden brown.

Meanwhile… in a shallow bowl combine the cinnamon and sugar.

Immediately dip the tops of hot muffins into melted butter. Then dip into the cinnamon/sugar mixture till coated. { Be extremely careful, the muffins are hot!}

Serve warm. Makes a half-dozen muffins.

On another note… I had to download the free trial of Photoshop. I usually use Aperture but it was giving me so many problems. I have loved using it for the past few months, but it was so slow, out of date, and it stated that I had some problems that I could not get fixed.

I went back to uploading my photos into iPhoto and was like… YES… it is supposed to be this simple. I have downloaded a trial of Photoshop.

As a blogger… I love picasa!

It is so user-friendly.

I am sure once I start using Photoshop and get to know it… it will become easier. But…. learning something new is always a hard thing for me.
