Happy Monday Friends!

I had a very exciting weekend! My husband and I were given an all-expense paid trip to the iHeart Radio Music Festival in Las Vegas, Nevada. It was such a great experience! We got to see so many talented musicians all on one stage. We laughed. We sang along and sometimes we didn’t…. because honestly we didn’t know who the band was. {YES… we are old!} We slept, we danced, and we ate lots of yummy food! It was wonderful!

While we were away… we had our [old] laminate kitchen countertops ripped out and they are installing granite countertops as we [speak].  I am so excited!!

However… that means no baking in the kitchen this morning!  I have been thinking about doing some muffin tips for quite a while… and where as my kitchen is not working at the moment… I figured this would be a perfect time.

These muffin tips came from The New Betty Crocker Cookbook.

I love these tips! They have really helped me bake with confidence. It’s really frustrating when you follow a recipe and it doesn’t turn out. These muffin tips will help you make the perfect muffin.

The perfect muffin is…

  • golden brown
  • slightly rounded
  • tender
  • light
  • even-textured
  • moist inside
  • easy to remove from the pan

I believe the number one rule with making a perfect muffin is…. do not over mix!!!

Here are some additional muffin tips…

  • Stir in the dry ingredients just until it is moistened.
  • The batter should be lumpy.
  • Use an ice cream scoop when disturbing batter.
  • When muffins are done, immediately remove them from the pan.
