Zucchini Cookies with Cream Cheese Frosting
I know the time has passed for zucchini recipes… but I could not share this recipe with you. I know it is harvest time. I know all those gardeners and planters are reaping their rewards. I have seen so many people post pictures of great big zucchini’s that they have grown themselves in their gardens.
I think that is awesome!
I myself do not have a garden.. but plenty of friends who share theirs with me. I love these cookies. I have added a secret ingredient… to make these Zucchini Cookies With Cream Cheese Frosting taste a bit more like chocolate.
Topped with a cream cheese frosting… they were moist and sweet! You couldn’t even really taste the zucchini!
Here is the recipe…
Zucchini Cookies with Cream Cheese Frosting

- 1/2 cup shortening
- 1/2 cup sugar
- 1 cup brown sugar
- 1 tsp. vanilla
- 2 eggs beaten
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1 tsp. cinnamon
- 3/4 tsp. salt
- 2 cups flour
- 3 cups zucchini-grated
- 2 cups oatmeal
- 1/4 cup unsweetened Hershey’s cocoa [optional-secret ingredient]
Directions:
Preheat oven to 375 degrees.
Combine all the ingredients and mix well. Drop by spoonful’s onto greased cookie sheet.
Bake at 375 degrees for 12-15 minutes, or until done.
Remove from oven and place on wire rack to cool.
Top with Cream Cheese Frosting { recipe below}.
Cream Cheese Frosting
1 (3oz) pkg. cream cheese, softened
1 Tbsp. milk
1 tsp. vanilla
dash of salt
2 1/2 cups powdered sugar
Blend cheese, milk, vanilla, and salt with a beater. Add sugar beating until frosting is smooth and spreading consistency. If necessary… add a tsp. of milk one at a time.
This is a great way to use up those zucchini’s that you have grown… and you won’t even know that your eating zucchini!
