Dinner??
You stumped on what to cook for dinner tonight.
Cheesy Broccoli-Rice Bake.
I added this to my dinner menu last week and oh my… it was such cheesy goodness!
I think this has been one of the best broccoli-rice bakes I have ever tasted.
Here is the recipe..
Ingredients
- 1 can of cream of chicken soup, undiluted
- 1 can of cream of broccoli cheese, undiluted
- 2 cups milk
- 1/ cup sour cream
- 2 cups mozzarella cheese
- 1 cup cheddar cheese
- 2 cups cooked rice
- 2 cups chopped fresh broccoli
- 1 small onion, chopped
- 1 tsp. paprika, divided
Instructions
- In a large bowl, combine soups, milk and sour cream. Stir in cheeses, rice, broccoli, onion, and a dash of paprika. Transfer to a 9x13 pan sprayed with non-stick cooking spray. Sprinkle with remaining paprika. COVER and bake at 350 for 35 minutes. Uncover and bake an additional 5-10 minutes longer or until rice and broccoli are tender.

Even all my little ones liked this casserole.
This makes quite a lot of food. This recipe would be good for a huge family gathering or for a potluck dinner.
I have tried making several broccoli rice casseroles in the past and the recipe almost always asks for uncooked rice… which in the end never gets cooked all the way. I choose to cook the rice first and it is another extra step, but having the rice cooked all way is much better in my book. If you are on a diet… I am sorry this recipe is not for you. This is chuck full of cheesy goodness!
Soup+Sour cream+Cheese+Broccoli+Rice=a casserole of delight!
** I did add some cooked chicken, but that is optional.
This recipe is a winner and keeper in my opinion and my family. It was even good for “leftovers”.
