Cookies for Breakfast?
Why not?!!
My daughter loves raisins. However… I rarely buy them. I don’t why… I just don’t. I bought some and decided to make these delicious cookies. I am so glad that I did. They turned out great!
These Breakfast cookies are a simple cookie. They are a crunchy cookie. If you like raisins in your cookies… these breakfast cookies are a must make. They are best with a glass of milk.
If you are going to your next breakfast potluck bring these! Your guests will be surprised. Yes… I brought cookies. Breakfast Cookies.

Breakfast Cookies

*adapted from Taste of Home’s 2000 Quick Cooking Guide Annual Recipes
- 1/2 cup butter-softened
- 3/4 cup sugar
- 1 egg
- 1 cup all purpose flour
- 1/4 tsp. baking soda
- 2 cups cornflakes
- 1/2 cup-1 cup raisins
- crumbled bacon-optional
Directions:
Preheat oven to 350 degrees.
In a mixing bowl, cream butter and sugar. Beat in egg. Add flour and baking soda. Mix well. Stir in cornflakes and raisins. Bake at 350 degrees on a ungreased baking sheet for 12-15 minutes or until browned.
The cornflakes in these cookies are great. They add a crunch and a great flavor.
Breakfast + Cookies… a win in my book!
